How Beef is Graded  and Why It Matters
 
Before understanding what makes Sterling Silver special, it helps to know the basics of beef grading

• USDA Select
Lean, mild, and budget-friendly , but typically the least tender and least flavorful due to lower marbling.

• USDA Choice
A common restaurant standard. Good marbling, solid tenderness, and dependable flavor.

• USDA Prime
The highest USDA grade. Rich marbling, exceptional tenderness, and bold beef flavor. Often found in top steakhouses.
These grades are mostly about marbling , the tiny streaks of fat that melt during cooking, creating tenderness and flavor.
